How To Have Color / Sizing Options

I am setting up a clothing site and not sure how to configure the items. I don;t have much experience with this. I am hoping someone has done the same this before.

 

For example:

 

I have a T-Shirt that needs Color and size options but certain colors are only available in some sizes and others in all. Can it be set up to block out certain combinations ?

 

Is there a way to have each specific Product#(my own) associated to the available combinations ?

 

I would like Product Quantity to be tracked individually for each specific Product # yet I want all different color / size versions available from one page.

 

Maybe there's a plugin for this ? I looked through them but found nothing.

You may want to see how the attributes can be assigned/setup for each products...The attributes option/function is on the admin/catalog side.
