Change The Langauge And The Categories

Hi all, I just install the following version oscommerce-2.2ms2-060817, I install this in a internet server, this is running just fine, the question that I have is about the languages, how can I do to erase the english and deutch langage, I tried to do this but I couldnt. Another question is about the categories, for example if I want to make a product that's have a lot of products how can I do?, this is possible, for example a computer contains hard disk, memory, cpu, monitor, mouse, keyboard and other stuff, my question is if is possible to do this or exists an add-on or another contribution or something like this to do this operation :'( , I hope someone can help me.
