I have a big problem with greek language in admins page

I have a big problem with the greek language in admins page. I have install my shop in my pc to test it, everything works perfect and the greek language appears everywere in shop correct except when i want to create new category in the admin page in greek instead of what i write the category appears like that ????????? in the admin page and also in the shop page ????????? how can i correct this. it is urgent pls someone help me i have finished my shop and its ready to be lunhed and that problem appeard.

To use Cyrillic (Greek) characters in your site all files must be saved in utf8 format. The database must be in utf8 format, php must be in utf8 format and mysql also.

i have install it in latin1 iso mode which normally works with greek.how can i make the mysql and php work with utf8? do you mean when i make the database from phpmyadmin?
