i am newbie and searching for the right contribution that helps to define more attributes details possible.

 

choose different sizes for a Tshirt design (product_info.php):

Tshirt Boys 18€

-L

 

Guys Long Sleeve 20€

Girls Long Sleeve 22€

-l

 

dont know how do realize that...

the layout is the least of your problems. You can use the option type feature.

The stock can be a headache. You can check the qtpro but I am not sure without mods if you can manage to have stock control at the product attributes level.
