Custmomizing tables

I've just installed this for a friend, and they want to see different information in the Customer table. When I go into the admin of the customer table it shows 'gender' and a few other fields that I can turn on or off.

 

However, my friend wants to see 'company name', 'ABN' (Australian Business Number) etc.

 

1. Can I just add the relevant columns to the underlying MYSQL tables?

2. What determines the displayed columns?
