I want to change it to something else, but don't know which php file to edit. Where is this message defined? Also, where does osCommerce actually store the variables you define using the admin tools (such as Store Name and Store Owner)? Thanks.

Variables are defined in .../catalog/includes/languages/english.php and .../catalog/includes/languages/english/index.php I think its help you.
