Can i turn off or disconnect product quanitity

Need to turn off the product quanitity so my customer won't see if we have products in stock.

or can i have a default amount for all product so won't have go into each products to set amount.

The first part of your question: go to admin -> Configuration -> Product Listing, then set display product quantity to a value of 0 (zero);

There's no default value for quantity (well, yes but it is 0). You could set a number, say, a million :) , to all products using phpMyAdmin if you know how to run an update query, but then every time someone buy a product it will be deducted from the quantity.
