How to edit Privacy Policy, shipping and returns, terms of use

Hello can someone tell me exactly the easiest way and which folder I can go to to edit my privacy policy , terms of use and shipping option, my website is done but I cannot add text to those files.

Try the files in catalog/includes/languages/your_language.

Hi there, I have a dumb questions, I am trying to edit this file, but it will not let me. I can not get a cursor when I choose to edit any of the files (privacey, shipping terms, etc). Anyone know what I am doing wrong here?
