Zones - Select From ?

I have set my site up with a single country and have added all of the counties (zones) for the country. When I create an account should I get a drop down list of States (Counties) that I can select from.

 

Also when I create an address for an account, going back in and amending it the post code disappears and the country has some stuff appended to it.

 

Not easy to explain - take a look on www.koi-waterlife-centre.com/eShop/catalog and create a new account.

 

I am really fed up as we want to go live, but having found the address problem cannot even thing of that yet.
