New Customer Detail and Standing Order

I have 2 features I'm looking for, but I've been unsuccessful so far.

 

First, would anyone know how to add a new Customer Detail. It would offer choices from a drop-down list. The choice would become a default that would appear on the customer details section of an order, though the customer would be able to choose another option when placing an order if desired.

 

Second, would anyone know how to add a feature so that a customer could set-up a standing order on their profile.

 

Any ideas would be appreciated.

If by standing order in the customer profile, you mean a order that the customer saves and re-orders with some frequency, you may look at this:
