Changing email sent out as order process

How do you change the email sent out when someone orders from you? Also can you change what the email says when you update the order and notify the customer? I would like to send out more personalised emails from my own shop.

You gotta check out the files in your /includes/languages/ subdirectories. There you can find all the texts you mentioned and alter them.
