I think what you're talking about are regular product attributes that come built into oscommerce... If you go in your admin console to Catalog -> Product Attributes, you'll see where you can define options (like color, size, etc), and option values (like red, green, blue, small, medium, large, etc), and then apply those to your products, so that one product may come in red and green, with small and medium sizes, another may come in red and blue, with small and large sizes, etc... And on the product_info page on the catalog size, the customer is presented with dropdown boxes for each option (size, color, etc), populated with the corresponding values (i.e. color would show red, green, blue, size would show small, medium, large), and when they make their choices and add to the cart, those options are displayed in the cart listing, and are carried through to checkout, displaying on the invoice in the admin console when you go to review the order...
