In the product listing, how can I get the Available Options to order from Small - XXXL or whatever the largest size is? Right now it is going from largest to smallest.

You can define the order of the attributes any way you like in either the Product Attributes or on the product info page in the Admin. It is part of the Free Call for Price v4.0 that I have pulled out as a stand alone. Until I am done working on this, it is located on my site under Downloads category.
