Weight unit in osCommerce? Using only one language?

Hi all,

 

As I add new products, I am putting in their weights so I can use the UPS shipping module. What is the basic unit of weight in osCommerce?

 

As parochial as it is, I am only adding descriptions in English. How can I eliminate the other language entries in Admin for adding new products or categories?
