Find a bit of text - on the page you want to edit - and do a global search for that text through your OSC files. For example, searching for the text that appears on the Welcome page "This is a default setup of the osCommerce project" shows that text is located in /includes/english/index.php. This is therefore the file you want to edit. Other info pages can be mostly found in the same directory.
