Any idea how to do this? It is not clear to me what page(s) or modules you are referring to. For product listing, the sort order by default is by products name, but it could be changed, say, by products model in code. If it is the products new module, then it is by products date/time added, which you could changes via phpMyadmin, if you like, th efirst product shown (from top to bottom, left to right) is the one with the latest date/time. That's only my guess as I dont know exactly what you want to achieve.
