Checkout fields

Can someone please tell me where the switches are to turn some the checkout fields on and off. Specifically i'm looking for this code:

 

define('ACCOUNT_GENDER', 'true');

 

According other forums, they used to be in the application_top.php. I have installed mods that may have affected that file but i doubt that i affected the location of those switches.

there's a few you can shut off in the admin section under Configuration>Customer Details
