Oscommerce is extremely functional and powerful. If it can't do what you want it to, there are hundreds of contributions that will make it work for you. But there is a powerful limitation that oscommerce suffers from.

Here it is:

The use of TABLES is ubiquitous. The world of web design is moving forward with the div tag and this should come standard in oscommerce.

I can only imagine how long it would take to switch oscommerce's design layout into a layout controlled with div tags, but when you come to oscommerce for the first time you will be confronted by the challenge tables present to you. You will find that you are stuck into using a design that thousands of others are using at the same time and your imagination is stifled by the oscommerce layout (limited by tables). Tables in the world wide web are not cool anymore. And that makes oscommerce not cool.

And sts templates still don't solve the problem. They help, but it's a band aid to a mortal wound that bleeds profusely and is just grossing everyone out (alienating users and those who want an original appearance to their website).

If you say you can't do it, you're only fooling yourself.
