Need Help !! order management and shipping costs

are there any contributions on offer that would allow me to do the following:

 

 

i sell a range of car styling products, on the majority of the products delivery is free, but if the customer was to purchase a poduct made of fibreglass the delivery is £45 regardless of the number of items in the basket. how can i do this?

 

also

 

i would like to add a hidden field on the product that displays on the recived orders page but does not display on the product listing

 

i would then like to be able to download all of the recived orders to microsoft access so i can mailmerge them into a invoices, how can i do this without dupliacting orders?
