Accessing variables

Hi. I am trying to write a separate page for checkout that passes the order info (name/address/order items, but NOT CC info) off onto another system to complete the secure transaction, which will then pass the user back to my system and mark the order as pending.

 

I basically need to know how to access the variables for the cart contents and name/address info of purchaser (to put in a hidden form and send to payment gateway, where cc info is collected), and how to mark an order as completed once the buyer is passed back to my system from the payment gateway.
