Customized Attributes?

I am doing a website that needs 2 things that appear to be something similar to what the attributes section does:

 

1) Offer a specific product in a variety of sizes, but each size has limit of # of colors you can order.

- Example: Small Shirt comes in blue or green, medium comes in orange or green and large comes in pink or striped

 

2) Offer a few categories of products that will allow you to 'customize' what is said on them:

- Example: A hat can have your name or message on it, so there would be a text box that you could type in what you wanted your hat to say, but only limited to 8 characters.

 

Is there anything like either one of those examples out there? Any help greatly appreciated!!!
