How do Attributes work with EP

using EP 2.79b don't know what all this v_attribute_values_name_5_1_1 v_attribute_values_name_5_1_2 v_attribute_values_name_5_1_3 etc. etc. etc. is in the EP downloaded file. can't find mention of how they are suppose to work in the EP User Manual either. Does EP ignore these if I leave 'em blank? How would I make them work if I wanted to?
