Question on CVV contributions

I was looking at the contributions and forums but I didn't find what I needed.

 

Basically, the store owner needs to have the CVV for offline processing (using the standard credit card module I think, not a gateway).

 

I looked at the CCV contributions but I'm not sure if they are violating the concept of not storing the CVV.

 

Is it true you can usually store it until you process the order?

 

How do the contributions work? do they give you the ability to delete the CVV from the database once it is entered manually for payment?
