2 Questions- Latin or Deutch wording and osCommerce

Hello..I FINALLY got everything up and running with my osCommerce site, but I can't find out two things. 1st in all my product descriptions it has Latin or Deutch wording that automatically comes up. I have tried to erase it in the product_description.php file, but then that messes the entire page up. What to do?

 

Next Question: How can I change the header bar from saying osCommerce when I go the site to my site name? You know, the little category at the top that says what site you are on?
