How do you change how products are displayed?

I would like to change the product view to rows of three's.

If you are talking about the "New products for month" - then you can change the rows in Admin >> Configuration >> Maximum Values >> New Products Module . If you have a column with 3 products, then 9 will 3 rows, if you change this to 6, it will be 2 rows etc.
