Adding attributes to an order

I have just installed OSCommerce MS2 and I now see that I will need to associate additional information with an order. The business is childrens books, and I need a way to associate things such as the name of the child, age, gender, and a line for a dedication with the order so that I can retrieve the information for creating the book. I was thinking of just adding a page that would be beween the "buy now " button and the cart page where they could enter the information and then have it submitted to the database under the order number. I then realized I didn't even know at what point the order information is created. Does anyone know of a contribution that would facilitate what I'm trying to do?
