I am really confused as to how this application works as far as loading in products goes....so I down loaded the manual and found that my install looks nothing like the documentation....

I mean I am missing the nice tabbed table layout showing different options of the product (General, Data, Images, Attributes and Categories)...Can someone help me out or point me in the right direction, I mean this install went fine and it got up and running quickly...Was there an option I missed?

Take a look...this is the docs screen shot -> LINKY

and this is mine -> LINKY

FYI I am using osCommerce 2.2-MS2 (don't know which ver as I don't know where that info is listed)

The online documentation that you downloaded is for the next release. You need to download the entire package for 2.2 and it comes with the correct documentation.

Is this "next release" even available in beta currently?

The next release (MS3) is available for anyone to download, but it's not a production version and hence not for use on a live website.
