Product attributes questions

Hi! I am setting up my catalog and have a couple of questions that I hope someone can answer...

 

#1. Is there any way to have one of the attributes to be Other then have a blank spot for them to type in the choice? (I also need one that says Yes for embroidery, then a blank spot for the name to be embroidered.

 

#2. 99% of my products are geared with color choices-- approximmately 30-40. Is there anyway to add them easier than doing all of the attributes for each product?? I have done 3 items so far and it is taking me forever :-D.
