Increasing length of option values

Where can I increase the length of my option values so that it accepts more characters?

I'm guessing your 'problem' is related to the database field size.

 

in Table products_options_values you need to increase the size of the field products_options_values to something higher. Perhaps 24.

Now is there any way to control the order of the option values made available?

 

Also is there a way to add a "you must choose one" type option that is initially selected but doesn't allow the item to get added if it remains selected?
