Modifying order display listing and product display listings in admin section

Hi, i am new to oscommerce, and have fiddled with it the last few days. Right now when you go to the catalog and look under a category and see the listings of products, there are only 3 fields available, "Categories / Products", "Status", and "Action". I would love to be able to display other fields, like price, manufacturer etc. I wouldl like to do this with the orders listing and the customers listings too.

 

I was hoping if this issue has been addressed or discussed somewhere, i have tried real hard to look for the solutions to no avail.
