database functions

Hi,

 

just trying to learn some of the code and get used to all the functions

when i input data into the database and it used the sanitze string for example

 

<p> would become _p_ etc

 

what i need to know it what function changes it back when outputting it onto the screen

ive looked through pages of code but cannot seem to pin it down
