HELP! Required fields off?

ok, yes I went under Administration/Configuration/Customer Details, and my screen does not look like the docs. I just have Title,Value,Action and the fields Gender, Date of Birth, Company, Suburb, State. The only options i have are to change the name and set value to true or false which seems to have no effect on the New Account screen. The docs show a screen with MANY more options then I'm seeing under Customer Details, this is the latest install. I have not changed a thing.

 

I really want to turn off everythng excepot email, and now even show those fields on the New Account screen.
