I wanted that exact thing at first, then I realized it might not be good for me, but I might do it if I can figure it out.. I havn't dove much into this, mainly working on other things, but if I get around to it before anyone helps you, ill be sure to let you know..

I am looking for the same thing. In the product listings under where it says Quanity "0" or "10" I an it to to say "Avalible" or for out of stock say "Out of Stock"

There are a couple of contribs if you search for them, that deal with out of stock issues - there's one that I'm using ('stock_status_in_product_listing_v1.22') that shows products 'in stock' or 'out of stock' (if the stock =0). It doesn't display the quantity available. When a product is out of stock, it displays a little message, inviting the customer to sign up to receive product notifacation of when it comes back in, and you are able to disable the 'buy' button for products where stock = 0.
