How would I do this?

I would like to replace the heading_title "Let's see what we have here" when one clicks on a catagory with the output name of the catagory selected. I believe this will require a bit of code to keep track of the catagory name flow. I am still learning PHP and am a not expierienced enough to try to write the code myself. Does anyone no if there is a contribution that will do this? Does anyone know how to do this?

 

Another idea I would like to incorporate into my site is something similar to my above question but in addition to that. I would like to have the ability to click on a catagory and have the contents of that catagory displayed in a way that shows the name of each manufacturer and it's products offered (manufacturer by manufacturer) in list form and in order so that it is scrollable. Any idea's?
