changing name in header box

I see all of the directions of turning off a specific header box in the nav bars and I see the directions for changing images and colors and sizes. However I was unable to find directions on how to change the word Manufacturers to Breed of Dogs. I am selling items based up the breed of dog and not buy who made it. Can this be changed where do I change it at?

 

any help or pointers would be great. I have all of my store set up except for this last thing. :)
