Server Timezone Isn't My Timezone - How to get around this?

I've set up a website at http://www.aminoz.com.au and the server is based on California. As you can see, my website is Australian. As a result I would like the time/date displayed on the webpages to reflect this.

 

Now I'm wondering if osC has a function where I can edit the timezone so it will automatically add (or subtract) x number of hours to the server time pulled from the date php function?

 

Alternatively if anyone has any suggestions it would be very greatly appreciated. Thanks!!
