I have been looking at the pages and it seems that the title of the page is linked to a file somewhere that tells what it should state where is it if there is one?

Anyway to change the title on all pages on your site open the file catalog/includes/languages/english.php

and edit this statement:

define('TITLE', 'Oscommerce');

replace Oscommerce with the name you wish to have instead.

You did do a backup? eh?
