How do you modify the Privacy, Shipping and Returns, and Conditions of Use fields?

How do you modify the Privacy, Shipping and Returns, and Conditions of Use fields? My webhost (who offers OSC as their default shop cart) can't figure it out and I can see the php files in the file manager but have no way to edit them or would even know what to do there as I know nothing about changing code if that is required. I set up the rest of the cart with my products, etc., but can't seem to find a way to modify these. Thanks!

All those files are at the level of includes/languages/english/

 

There are files of the same name in the root, but the text for those pages goes in the files at the languages/english/ level.
