I stumbled upon this 'directory. I see a list of all .php files. I can open them, and I see they can be changed and saved. Is this how/where you edit .php files? Should I not be messing with these files?

 

If this is not where I customize text on the site, where do I do that?

Yes that is correct all of the text that appears on any of the pages is defined in language files which correspond to the display page of the same name.
