Invoice E-mail and Edit problems

Hi, a couple of quick questions regarding invoices.

 

I have enabled the emails to be sent using HTML, however the test emails I receive are still in plain text - is this normal?

 

Also, How do I edit the invoices? There are some columns etc that are not required, and I'd like to add some information too.

 

I am using a template I bought that used STS (I think...), so the 'Fancier Invoice...' contrib is incompatible .. I wish I could just use that!
