Decustomisation -> Fresh Install, keeping sales

I've been using oscommerce for an online retail enivronment for the past 6 months.

In this time I've added a few modules and re-written more pages than I care to remember.

 

I'd like to go back to basics and install a fresh copy of oscommerce.

 

However, I want to keep everything I already have in stock as well as the details of all my sales / customers.

 

My plan is to simply copy the data from the old database to the corresponding tables of the new database.

 

My problem is I dont know what tables are relevant.
