State and Providence in My account information

Done some searching but couldn't seem to find an answer to what I am sure is a simple question. In my shopping cart that I am setting up here: http://thedressparty.com/shop/create_account.php when a user gets to this screen to set up an account there is not an option or a field for State in the your address box. The only country that I have is the U.S. but I need to know the state. Isn't this supposed to be in the default installation? I would appreciate any help that you can give me. Also I only need to charge for tax in California. How do I set that up as well.

Thank You in advance for any responses

Thanks Alan. That was easy. Is there a simple way to make it have a drop down menu of all the States that I have entered into the zones?
