HELP! Quick Mod - Expand Categories & "Out-of-stock" Option

I have two simple mods that I'm trying to do here that I can't quite figure out.

 

The first being - I don't want the menus to collapse. I want them to stay open, as in display the entire product tree. Is this possible?

 

Second, when we run out of a specific product, instead of removing the object, I want it to print "out-of-stock" unless I actually delete that item. Is that possible?
