Bypass delivery and payment information + create account ignore inputs

I'm using osCommerce to put together a small internal only web ordering system for things held in stock in the stores. That doesn't require me to need the users to go through the delivery and payment information screens after hitting checkout (and I don't want to confuse them!) How can I change it so that when users hit any of the checkout buttons, it ignores the delivery and payment screens and jumps straight to the confirmation screen?

 

And secondly, when they create an account, I am using some of the fields for other uses (e.g. the street address to be their room number). As the entered data is less than required number, how can I disable checking that the input matches the required length for fields such as street address, city, postcode and country?
