I have changed the name of the store in the admin panel as I thought this would do it but it hasnt. Every page on my site has the title osCommerce. OTH, I strongly advise you to install header tags contribution ... it will take care of your title issue too and will allow you not only to define specified titles for EACH page, but meta tags too.
