How do I take my site 'out of action'

How might I take my site offline, but leave a message telling customers when we will be back up and running?

Insert an index.html page in the root of your web. Customers will land on an index.html first if such a page exists.

Just to double check before I do this.... by deleting the index.html after I have finished what I want to do, will bring everything back up normal again yeah?

Besides doing what Vger suggested, you should also rename your includes directory. Otherwise visitors can get to your site via another page. Once you are done, just rename the includes back to includes and delete the index.html file.
