I have the same (linked) products under different categories and need to know which category they come from when ordered as there is no individual model number.

 

Does anybody know how to change the details emailed in the orders to include categories and also stored in the system.

looks like a major change to me. You need to add the category to te virtual cart, to the cart in the database, and to the order to be able to track it. Then it's easy to add it to the email ;-)
