How can i have it setup so that the information is emailed to me? Email is not secure and the messages can be intercepted and read. The only way to due what you want and still maintain some level of security is to install the Credit Card Module in admin - modules and use the "Split Credit Card E-Mail Address" option. It will email the middle digits of the credit card # to you and put the rest in the order database. It is really not recommended to use this method, as email is not secure.
