Changing the actual text

I've scanned all the language files for the 3 states an order can be in. e.g. Pending, Processing, etc

 

Where would I go to change these to say something else? I'd rather say "in-hand" instead of "processing"......... and if i change them would it impact on functionality of other pages?

Go to order _status tables these values are defined in that table just update that table values.
