Date and time on orders stamped by server?

I just noticed as I was setting up a new store that all orders, emails, etc. are stamped with my hosting server timestamp which is one hour behind my local time. Although I'm not sure that this is a big deal or has any ramifications, it caught me off guard, as I expected the timestamp to be my local time. It is confusing to see an order with a time stamp one hour before the current time!!! Is there a way to change this in OSC so that I can add the one hour to the timestamp? I could not find an easy way to do it, and did not find any posts on the forum here about this subject.
